The Avocado. The most popular avocado in the world is the pebbly skinned Haas variety. Mexico, the largest producer of Haas avocados, is also the place of discovery where Spanish conquistadors first introduced the fruit to the rest of the world. Full of potassium and fiber, avocados contain all the good fats and oils.

Try it my favorite way, on toast. Start with good bread. I love using baguettes or anything with a great crunch. Toast until golden and spread on a thin layer of mayonnaise. Place your sliced avocado (make sure it’s ripe) right on top.

Top with halved cherry or grape tomatoes, thinly sliced red onion, salt and pepper. For a kick, add chili flakes on top. For richness, add on a poached egg. So simple, yet so delicious.
