Hummus and other bean spreads are a great addition to any summertime party. They’re tasty, easy to make, easy to eat, and generally consumed by all. But if the bland beige color doesn’t catch your eye, try switching it up. Store bought and homemade hummus can be brightened up by adding roasted veggies for great flavor and a vibrant color change.
Try a beet upgraded hummus. Roast a half pound of red beets in the oven, clean thoroughly, and cube. Add to your CUISINART food processor with the base hummus, and give the whole thing a nice twirl. The hummus will take on a stunning purple hue, as well as the sweet earthiness of the beets. Veggie hummus is perfect on crackers or toast, with some herbed goat cheese.
