Celebrate mom this year with brunch! Mother’s day is this Sunday and if you haven’t made reservations yet, make them now!
If you’re thinking about celebrating in, try making her Eggs Benedict for brunch.
- 1 english muffin
- 1 slice of thick-cut ham or 2 slices of canadian bacon
- 2 egg
Start by making a hollandaise sauce.
- 4 egg yolks
- 1 stick of melted butter
- pinch of cayenne
- pinch of salt
Whisk the yolks in a bowl until they’ve doubled in volume. Place the bowl over simmering water, creating a double boiler, and continue to whisk rapidly so the eggs don’t scramble. Slowly drizzle in 1 stick of melted butter, until thick. Mix in a pinch of cayenne and a pinch of salt.
Next, toast your English Muffins, cut in half, and then coat with butter. Top with thick-cut ham or cooked Canadian bacon and a poached egg. Drizzle on your hollandaise and garnish with chives. Enjoy with mom, mimosas in hand!
