Easter Lamb Chops

The reference to Easter lamb goes back to the book of Genesis. It was a popular superstition that the devil was never allowed to appear in the shape of a lamb because of its religious symbolism. Religious or not, it’s hard to say no to lamb chops, especially when it’s this easy. You’ll need:

  • 6 lamb chops
  • 2 tablespoons of olive oil
  • 2 cloves of garlic
  • 1 tablespoon of fresh rosemary leaves
  • 1 teaspoon of thyme leaves
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

In your CUISINART food processor, Pulse together garlic, rosemary leaves, thyme leaves, salt, and pepper. Pour in olive oil and pulse until a paste. Rub the mixture on both sides of your chops.

In a large skillet on medium-high heat, sear your chops until brown and crisp, about 2-3 minutes on each side for medium rare. 3-4 for medium. Serve hot!
