All your breakfast favorites wrapped in a warm tortilla. Born out of Austin, but famously praised in Los Angeles, breakfast tacos are a brunch essential.

Let’s start with the classic. Start by melting butter in a skillet over medium heat. Crack in your eggs, lightly scramble, and season with salt and pepper. Don’t overcook.

Next, cook strips of bacon until crisp. Transfer to a paper towel and pan fry breakfast potatoes or hash browns in the bacon grease.

Bring another pan to high heat to warm the tortillas, flipping after 30 seconds.

Now it’s time to assemble. Put a tortilla on a plate and sprinkle shredded cheese on top. Add the eggs, bacon, and potatoes and you’re done! For something richer add slices of avocado, and for a kick some chili flakes. Serve with your favorite salsa, and enjoy with a mimosa in hand.
