All dressed up. Looking for a salad revamp? Start with the dressing.

Making your own dressing allows you to have complete control over the ingredients. Do away with the cupful of sugar and add some light and flavorful ingredients instead. To bring out the freshness of the greens, I recommend a tangy lemon vinaigrette. It goes great on dishes such as kale salad, or even on roasted potatoes!

Ingredients:

¼ cup red wine vinegar

2 tablespoons Dijon mustard

½ cup extra virgin olive oil

1 lemon, zested

1 garlic clove, minced

2 tablespoons honey

1 teaspoon salt

¼ teaspoon black pepper

1 tablespoon oregano, minced

To prepare, combine red wine vinegar, Dijon mustard, olive oil, lemon zest, garlic, honey, salt, black pepper, and fresh oregano and mix together in a large mixing bowl. Next, pour the mixture into a jar with a tight-fitting lid, and shake until smooth.

Refrigerate and let the flavors blend together for 30 minutes, and there you have it! Homemade, beautiful salad dressing.

Not only is homemade dressing a rich and tangy component on salads, it’s also a great sandwich spread. Drizzle some homemade Caesar dressing on your chicken sandwich, and add some feta cheese for a rich and creamy bite.

To make homemade Caesar dressing, you’ll need:

Ingredients:

1 garlic clove, chopped

¾ tablespoon kosher salt

1 large egg yolk

2 tablespoons fresh lemon juice

¾ teaspoon Dijon mustard

2 tablespoons vegetable oil

3 tablespoons Parmesan, grated

Take garlic clove and chop thinly and quickly with the side of a sharp knife. Set aside. In a mixing bowl, combine egg yolk, lemon juice, and mustard. Whisk rapidly until smooth, and add mixture to a medium saucepan. Adding drop by drop to start, add vegetable oil to the pan while simultaneously continuing to whisk mixture. Continue until mixture looks glossy. Continue to whisk and add oil until mixture has a thicker texture like cream or mayonnaise.

Add salt, garlic and Parmesan, and whisk until smooth. Refrigerate, and add to your favorite salad or sandwich!
