You can make an easy Irish Corned beef and cabbage dinner with only a few ingredients and a crackpot. To make, layer carrots, potatoes, and onions at the bottom of a crackpot, and cover with half water and half dark beer. Place your trimmed beef brisket on top of the vegetables. Season liberally with salt and pepper, or any desired spice mix. Cook on high for seven to eight hours. Add your cabbage leaves with an hour left. Adjust for seasoning and serve with a good dark ale and soda bread. The corned beef makes for great sandwiches the next day too.
