With avocado, carrots, and kale peaking right now, mix up these fresh veggies into a clean, resolution-approved, antioxidant-rich salad. To make, start by gathering 1 bunch of stemmed and finely chopped kale, 2 cups of grated carrots, half an avocado, peeled and pitted, a quarter cup of thinly sliced red onion, 2 tablespoons of toasted sesame seeds, and half a teaspoon of soy sauce. Throw in a large bowl and toss. Use your hands to thoroughly mash the avocado into the kale. Set aside at room temperature for 30 minutes before serving to let the kale soften and marinate.
