Beets are not only packed with nutrients such as Iron, Magnesium and Vitamin C, but when made right they are delicious too. Case in point – cold beet salad with gorgonzola, arugula and a light red-wine vinaigrette. To make, roast your beets until fork tender in the oven at 350 degrees, about one hour. Allow them to cool and then peel. Dice your beets and then toss with fresh arugula and a red wine vinaigrette. Garnish with generous chunks of gorgonzola or a similar blue cheese, and walnuts or pecans if you have them.
