Potato croquettes are a savory that will have your guests demanding a recipe. To make fifteen croquettes, mix two tablespoons of milk, half a teaspoon each of cayenne pepper and chopped green onion, 3 tablespoons of flour, and 2 egg yolks into 4 cups of mashed potatoes. Salt to taste, and then chill the mix. When ready to fry, scoop the mashed potato mix out with a scoop, and coat in egg-wash and seasoned bread crumbs. Shallow fry until the croquettes are golden on all sides. Allow to cool for a minute before serving. These croquettes will stay crispy long into the night.
