How big a turkey? l1 m Anthony Dias Blue with the Blue Lifestyle Minute sponsored by CUISINART. When ordering your turkey, figure one pound per person – but don’t waste your time on a bird smaller than eight pounds. If you’re a small group, a capon or goose will do. But if you’ve got a big crowd, don’t get a turkey that weighs over twenty-five pounds. Two fifteen pounders will be easier to deal with than one thirty-pound monster. Be sure that the turkey will fit in your oven and you have the right size roasting pans. Get your turkey a day or two before Thanksgiving. Re-wrap when home, and when ready to cook it, rinse and pat dry. Sprinkle inside and out with salt and pepper. Place in a shallow roasting pan, breast side up, on a V-shaped adjustable rack. Refrigerate it until ready to stuff. l1 m Anthony Dias Blue sponsored by CUISINART-fine small appliances and cookware. Visit CUISINART.COM. This is the Blue Lifestyle Minute, visit our website at
