Roasting a pumpkin brings out all it’s natural sweetness, which pairs great with traditional recipes such as risotto with parmesan and sage. To make, roast bite-size pieces of fresh pumpkin in a 350 degree oven for twenty-five minutes or until tender, making sure to coat the pieces with olive oil and seasoning. Puree half and add it to your risotto when the rice is almost tender. Add the other half of roasted pumpkin on top with some fried sage and you have a dinner that reflects the autumn season.
