The slight bitterness you get from charring your corn on a grill is a great way to balance the natural sweetness. Chile and lime seasonings such as Tajín also make wonderful pairings, giving corn an acidic and spicy kick. You can make a compound butter with tajin by incorporating it into some room temperature butter. Baste the corn with the butter while grilling and at least once after you remove it from the grill.
