There are many varieties of spring rolls that you can create. Even if you are not vegetarian, oftentimes substituting meat for tofu once or twice a week will keep you from overindulging on meat, and will keep your energy up. Creating this tofu spring roll is simple and quick-just like the cleanup!
To start, dice and sauté tofu in grape seed oil along with garlic and a splash of soy sauce. While that cooks, thinly slice carrots, cucumbers, cilantro, and green chili.
Now comes the fun part: assembly! Start by re hydrating rice paper wrappers – available online or at your local Asian market. To reinstate life, dip each sheet into a bowl of warm water for 12 seconds and then place flat on a plate. Layer your tofu and veggies on an outer edge of the now moist paper. Tuck the sides inward and tightly roll from bottom to top. Pair with your favorite peanut sauce for a true finger-licking experience.
