Tomato, meet watermelon – in salsa! This summer, watermelon is everywhere. In cocktails, on the grill, inside salads, sandwiches, you name it. To put a Mexican twist on the summer fruit, try this bright, seasonal ingredient in salsa. It’s perfect for a classic chips-and-dip combo, and you can also get creative with the pairings.

Other dipping ideas are with savory and spicy grilled chicken, soft tortillas, crunchy tacos, cheese crisps, or beef sliders. The sweet and spicy combination tastes great with just about everything, so don’t be afraid to think outside the box on this one.

To make my absolutely favorite sweet and savory salsa, dice 1 tomato, ¼ of a mango, ¼ of a medium sized watermelon, ½ of a red bell pepper and ½ of a cucumber, peeled and seeded. Finely chop 1 jalapeno, 1/3 of an onion, 6 basil leaves, 4 mint leaves, and about 1/3 cup cilantro.

Once your cutting board resembles a painter’s palette, add your ingredients to a large bowl. Squeeze in the juice of 1 lime, and drizzle in 2 tablespoons of honey. Add a dash of salt to taste, and stir. Cover your bowl and let it sit in the fridge for a couple hours before serving.

Be prepared for it to disappear fast!
